Rebekah's Kitchen: Turkey and Veggie Healthy Chili

Ok, so this chili recipe is SO good and SO healthy-- perfect for this fall weather we are having!  It's actually a weight watcher's recipe that my mom used to make when I lived at home.  You can eat a whole cup of this for ONE point and that's saying a lot!  

Here's what you need:

10 ounces lean ground turkey breast {i got a 20 oz. package and froze half for another pot of this later}
1 medium onion, diced
2 {28 oz.} cans of diced tomatoes
2 medium zucchini, diced
2 medium yellow squash diced
1 {15 oz.} can of black beans
2 {15 oz.} cans of fat free, reduced-sodium beef broth
4 celery stalks, diced {i used 6 just for kicks}
2 green peppers, diced
1 package of chili seasoning

First, cook up your turkey with the onions.  I actually did this right in the soup pot-- why dirty another pot?
eww- i hate raw meat. sorry i didn't take the picture AFTER it was cooked! lesson learned.

While the meat was cooking, I chopped up all the other veggies. YUM.

Then, just dump everything else in and simmer up to 30 minutes or until veggies are tender.  Voila!

Super easy and super healthy.  There are only 76 calories in a whole cup and it makes 20 cups!  You could easily freeze some of it OR just eat it up for lunches too :)


ps- I am making these with a few substitutes to go with this.  I'll share my success or failure soon!
