Rebekah's Kitchen: Caramel Toffee Dip

This title should really be Jen's friend's kitchen since the recipe came from a friend of my sister.  Oh well! This morning while the bean napped, I worked on making some caramel toffee dip for apples.  Omg, it's SO good and so easy.  I actually cut the recipe in half since there are only two of us and {let's be honest} I will probably eat most of it!  Nothing like breaking out the fall-ish recipes when the high is 100 for today.  Yes, that's right 100 degrees.  Ugh, makes me want to move south where it's cooler :)  

Here's what you need:

For a whole batch:
8 oz cream cheese, softened
1 cup light brown sugar
1 tsp vanilla
1/2 - 1 bag Heath toffee bits

Dump it all into a mixing bowl.

Mix it up {complicated, i know}.

Voila!  Slice some apples and enjoy.  You can eat it right away or chill it for a bit first.

It is very addicting, so if you try it, I warned you! Anyone out there have a good chewy granola bar recipe? 

ps- For the month of September we are embarking on a pantry challenge, which just means eating up all the food we already have {hello, tuna.  recipes anyone?} and NOT buying more until it's gone- excluding fresh stuff.  Calling it a challenge makes it seem more fun and less depressing, but it needs to be done.  I'll update you on the progress as the month goes on!
