Rebekah {and James'} Kitchen: Pad Thai


Last night, James and I decided to have an at home date {since we didn't have anyone to babysit}.  We spent part of Saturday tracking down all the ingredients to make Pad Thai- yum!  Then we put sweet Thomas to bed, broke out the wok and got going!  It was not only really fun to wear our aprons and cook together, but it also tasted delicious when we were finished.  We definitely needed each other to accomplish the quick cooking.  James manned the wok while i tossed in the ingredients and read the directions.  


We used this recipe, but made the sauce a bit differently {we could only find tamarind paste at Whole Foods, so we just started by adding one tsp. at a time and tasting it.   I think we had added 3 or 4 by the end to balance out the fish sauce, rather than 1/2 a cup of tamarind pulp. we also added a bit more sugar than it called for.}.  When I tasted the sauce it still wasn't really tasty until it was all mixed into the pasta and other yummy things:)-- it is just really strong by itself!


In the end, it turned out SO good.  There are things we would do differently next time, but all in all, it was great!  We had so much that I couldn't even finish it!
