it all started with mexican vegetables

Tonight we got started on dinner a little late. Since we are headed out of town for awhile, I haven't bought any groceries lately, so we were trying to use up some things we had. What happened? Our own version of Havana Rumba's congris (rice and beans), Kroger's "mexican" vegetables and chicken (cut up, spiced with cumin and cooked in a little olive oil with some chopped onion)! YUM! I find that my most creative meals and sometimes the best are made on the fly and with no recipe. If you live in Louisville and haven't tried Havana Rumba...you will not be disappointed!! DELICIOUS!




After dinner we finished our 2nd caramel popcorn conquest! It is so good that I hate to pack it up and give it away:) Tomorrow (after our membership interview at Sojourn), we are headed to NKY to celebrate Christmas with the Bush fam. Then back for a day and to SC! We are excited about spending the days to come with family! :)

Today's events: sleep in, stay in pajamas until noon, mail Christmas presents to those far away, read my new Real Simple and of course make caramel popcorn. (i love holidays!) With the help of my dear husband, we made a delicious batch of Aunt Leland's caramel popcorn. YUM! We shared some with our neighbors and are going to be munching on the rest for the next few days. I wanted to make sure that we could successfully make it since we are making another batch for some Christmas presents later this week:) Here's an up-close look! If you want some, you should come on by because we have got quite a bit to eat!!



Oh and this is a new little addition to our apt. Aren't they cute? I resisted writing "sketti" for spaghetti as J suggested, but then decided maybe it wasn't so bad. Now I pretty much love it:) i love chalkboards! Thanks World Market:)
I am getting so very excited to spend time with family over the next few weeks:) Christmas is definitely my favorite time of the year!

On holiday!

It's the first day of vacation and we both couldn't be happier. We didn't sleep in too late, but did stay in our pajamas til almost noon! It was so nice to have coffee and relax...I did some painting and J played a computer game. We haven't had a normal sleep in day since before July 1st (thanks dental school) and it was just plain refreshing. During the school term, J usually spends all of Saturday studying so that he can take Sunday off. He gets up early, I sleep in and then have to entertain myself while he studies. At any rate....now we get 3 whole weeks of Sundays (my favorite day of the week)!

Last night, we had our community group come to our house. It was fun to have everyone over:) Our little apt. doesn't fit too many people and with the GIANT Christmas tree, it was restricted even more...but we made it work!

Anyway, this morning we made a list of things we needed to get done (sell J's car, change the title on mine, etc.) and things we wanted to get done (shopping, watch the new Star Trek, see Sherlock Holmes, etc) over the break. Sooo after J finishes eating his chili spaghetti (yuck;) we are headed out! Only 6 days until we are celebrating in NKY and 12 until we will be in SC!! SO EXCITED!

Hello December!

It's officially December which to me seems so weird. Thanksgiving came and went and now Christmas is only 24 days away. Did i mention that I love Christmas? This year we spent Thanksgiving with the Bush family in Erlanger:) We had a great time hanging out, ice skating, eating, decorating for Christmas (a little bit), etc. We even had mashed sweet potatoes (yum)! I am headed back up there tomorrow to help mom B. clean out some closets and organize:) FUN! I really do love to organize...is that weird? Thinking I should make it a business, that is if anyone would pay me!

As of yesterday- James and I have been married a year and a half! WOW! He is such a wonderful husband and I am lucky to be able to be by his side as we grow in the Lord daily. If you think of it- pray for him these next two weeks...he is finishing up classes and then has to conquer his finals before he will be free to celebrate the holiday.

Speaking of holidays--i am still working on those pictures of the Christmas decorations. For some reason the mac has decided it no longer wants to read our memory card...so i have to find the camera cord and actually hook up the camera to download the pics. oh technology!

Pretty amazing, isn't it? The dentoform looks so much like a real mouth! Technology is pretty sweet! I am sure James may post sometime soon to tell you more about life in dental school (but currently he is studying for finals)! Pray for him if you get a chance. His last one is Thursday! YAY! Then we get 3 weeks off just to relax, celebrate, spend time with family and enjoy each other! Can't wait!

the cattle on a thousand hills...

How does time go so fast? I can hardly believe that it's the 17th of November and we are closing in on Thanksgiving! Soon J will have finished his first semester of dental school and we will have lived in Louisville for 6 months! Sometimes it still seems like we just moved in and other times it seems like we have lived here so much longer.

Tonight I want nothing more than to decorate for CHRISTMAS. I know it's a little early, but since we are going away for Thanksgiving to J's family in Cincinnati, I thought we should probably get it done this weekend:) I can't help my excitement. Even as i am writing, Pandora's Christmas music is filling the room (thank you ipod touch!) and I am thinking of all the days ahead. I have already put up a few things for Christmas and have gotten out our stockings. Again this year-no fireplace- so they will reside somewhere on the wall:) I promise to put up pics once we have everything up.

This morning I woke up to a call from work wanting me to come in for someone who couldn't make it today (which doesn't happen much) and on my way, i thanked God that i didn't end up subbing this year. It's really hard to go to bed the night before and not know if you are working the next day (especially if it means finding out early in the morning!). God has been so good to us and is continually providing for us. I was reminded today how He is continually working out my work schedule so that i get just enough hours to make do...even though every week it seems like i won't! We are learning more and more this year to rely on the Lord for things we used to take for granted (friends, food, $ to pay bills, etc.). I have been reminded today of this sweet passage from Psalm 50
"I am God, your God.
I do not rebuke you for your sacrifices
or your burnt offerings, which are ever before me.
I have no need of a bull from your stall
or of goats from your pens,
for every animal of the forest is mine,
and the cattle on a thousand hills."

I love it! Every animal of the forest is already His and the cattle on a thousand hills! What a beautiful picture showing that we can trust God to provide for us- for everything here is already His. When I think about that and a million other passages that point to way God takes care of His children and doesn't want us to worry...everything I worry about seems so small. Praise God for His sweet provision:)

chicken pot pie

Tonight's meal=chicken pot pie (yum!) We've have used this recipe once before and LOVED it. It was fairly simple to make and delicious! You should probably try it next time you don't know what to make for dinner. We substituted skim milk for 1 percent (to make it a little healthier), corn for carrots (because that's what we had) and cooked chicken for canned chicken (just as healthy, you can't tell a difference and it's SUPER easy)! ENJOY! Pictures of the before and after below!


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 onions, chopped
  • 4 carrots, diced
  • 3 tablespoons all-purpose flour
  • 1/2 cup dry white wine
  • 2 cups 1 percent milk
  • 1 10-ounce package frozen peas
  • 1 tablespoon fresh thyme
  • kosher salt and black pepper
  • 1 9-inch store-bought piecrust, thawed if frozen

Directions

  1. Heat oven to 400° F. Cook the chicken in a pot of simmering water until cooked through, 10 to 12 minutes; let cool, then shred.
  2. Meanwhile, heat the oil in a saucepan over medium heat. Add the onions and carrots and cook, stir-ring, until they begin to soften, 6 to 8 minutes (do not let them darken). Sprinkle the flour over the vegetables and cook, stirring, for 1 minute.
  3. Add the wine and cook until evaporated, about 5 minutes. Add the milk and simmer until the sauce thickens, 2 to 3 minutes. Stir in the chicken, peas, thyme, 3/4 teaspoon salt, and 1/4 teaspoon pepper. Transfer to a shallow 1 1/2- to 2-quart baking dish.
  4. Lay the crust on top, pressing to seal. Cut several vents in the crust. Place the pot pie on a baking sheet and bake until bubbling and the crust is golden, 30 to 35 minutes.

Pomegranate

J and I had our very first run-in with a real pomegranate tonight! I think that I have eaten one before sometime in my childhood, but not on my own. So tonight at the grocery store, we walked by the pomegranates and thought--tonight is the night! We actually have been waiting since last year...J's mom bought one for us when we were visiting last winter and we FORGOT to eat it before we left! We picked up the official POM guide to opening and consuming pomegranates and went home to conquer the task. The end result? the first few bites of the arils (red, juicy seeds) was delicious and the seedy, chewy part that came after the juice was gone was NOT so pleasant. I am a texture person and i did not particularly favor this one...BUT i did eat quite a few before deciding it was time to quit. J, on the other hand, enjoyed the taste and texture (more than I did). He agrees it's good for the antioxidants and another 11 letter word that starts with a. That is all I am going to say about that!

At any rate, would we try one again? I think so!

random

After much thinking and little encouragement from friends, I will be opening my very own shop on etsy.com to sell some of my signs :) As soon as I finish setting it all up, I will post a direct link so you can look!!

On another note, mom and dad came to visit this past weekend. It was so incredibly fun and of course they spoiled us to death! We took them to all the great places that they missed last time they were here because we had just moved in and didn't know about them ourselves! On Saturday night we bought some candy for all those little gobblins and ghosts, but much to our dismay we only had NINE trick or treaters!!! WHAT? Never in my life has this happened. I have to admit that it made me quite sad, but mom and dad made it pretty fun! We laughed pretty hard that night....until they started crying since J and I schooled them in spades!! Just kidding about the crying- but we did school them! haha. It was a fabulously fun time and I can't wait to visit them in the somewhat warmer south for Christmas.

Umm, can I share something annoying? For some silly reason, my computer won't let me post comments back! So, sorry if I never post back- i promise i read what you had to say and am thinking of you....my computer would just rather I be anti-social.

Well, it's just past 10:30 which happens to be past our bedtime lately! We were staying up til sometime in the 11 o'clock hour until recently when we've been getting in bed around 10. J always swears he's not tired, but I know better! That man is exhausted and he should be since he is in class all day and then has to come home and study/ hang out with me:)! He also gets up early to study most days! So my "not tired" husband who "doesn't want to go to sleep yet" has fallen asleep beside me on the couch :) He works so hard! I think I better wash my face, brush my teeth and join him! Goodnight moon!

hawthorne yellow

































i'm on a kick where i think about DIY projects a lot. it's probably not helping that i keep seeing on friend's blogs or at my neighbors apt. all the cute things you can do! since i didn't get any hours this week at work on Tues. i took on a different project. i tackled painting the dining room. since we don't have an Ace with paint around here (see previous post for frustration!) and they are the only ones that have the Pottery Barn colors, i took the paint chip to Home Depot and they color matched it perfectly. gotta love technology. plus, i got Behr paint- which turned out to be awesome, thick paint that didn't cause dripping. you wouldn't know it if you saw the paint job though! why? well i guess the people that have painted this apt. over the years didn't care too much about drips because they are everywhere. Oh and did i mention the bumpy walls? i think if you look closely in the pictures you can see the bumpiness that is occurring behind the buffet. just for the record, rollers don't go over bumps very smoothly!

at any rate, i think it makes the room look SO much better and makes our apt. seem much more like home. i love it and i think it goes well with the green in the kitchen. now the only thing is to decide whether or not to paint the hallway yellow with the extra??

ace hardware...what are you thinking?

Today I got the inspiration to possibly paint the dining room or start the bedroom. I picked out the perfect Pottery Barn paint colors and looked up Ace Hardware- the only place that seems to carry Benjamin Moore paints. 9 Aces appeared and only ONE carried the paint and it is 25 minutes away!!??! Seriously Ace Hardware, what are you thinking? Needless to say, all the inspiration went out the window..... Hah! For now I will deal with the creamy white hospital looking walls of our apt!

In better news, mom and dad are coming on FRIDAY and we are SUPER excited!!!!!

J&J's visit

This past weekend, Jen and Joey came to visit us! It was such a wonderful relaxing time full of fun and good food!! They spoiled us rotten! On Saturday night we decided to carve pumpkins-fun! Although, Joey didn't participate in the carving, he helped find a good recipe for the pumpkin seeds and cheered us on:) I think our pumpkins turned out well! We SO wished that the Santorums lived by us- can't wait to see them at Christmas!!!

i'm decorating for fall...in my mind


Aren't these rattan pumpkins the cutest? i think maybe i should become one of pottery barn's buyers because they always seem to pick out exactly what i like! So cute! it's already feeling like a very chilly fall here in louisville with highs in the low 60s and destined to drop even lower later this week- brr! we turned on the heat for the first time of the season last night and today i pulled out heated blanket out of the chest. fall is officially here (to stay, i think). i've decided that (at least until spring comes) fall is my favorite season and if I had an extra $75 to spend-i'd buy two of these super cute pumpkins and one of those berry wreaths for fall to decorate with! One perk of not having the money- after fall, i don't have to find somewhere to store them :) i'm looking on the brightside.
My sister Jen and her hubby Joey are coming this weekend to visit and we couldn't be more excited! They haven't seen our place here in louisville yet and we are convinced they will love it and want to move here....ok, that's wishful thinking, but hey we'll keep working on them! We are planning lots of fun things to do while they are here:)
Today and tomorrow are J's fall break! He is currently studying for a test he has next week, but plans to spend the whole day with me tomorrow (since i took off from work) with NO studying. HOORAY! it's like having another sunday this week! we have found that for his sanity and mine, it is best for him to take one whole "sabbath" day each week where NO studying occurs....and Sunday is the best day for it. I love sundays! But this week, i also love tuesday :) As for me, I am waiting for some paint to dry so I can continue working on a sign for my mom for Christmas...pictures to come:)

i love all things pumpkin--except pie!

It's been awhile. Our lives have been "kicked up a knotch" in the busyness factor lately, leaving little time to write. Two weekends ago, we made a whirlwind trip to SC to surprise mom for her birthday:) It was a success and absolutely wonderful to see the whole fam if only for a day and a half. Last weekend, J and I just relaxed here--went to the art show/ UofL homecoming downtown and enjoyed some time together. We are astounded that it is already October! Where has the time gone? But October for us holds lots of exciting things--camping, Jen and Joey visiting, my parents visiting, J's fall break!! It's already/going to be a great month. On to some things that I love lately....

1. anything pumpkin, EXCEPT pie! That's right- I love pumpkin spice lattes (yum!), pumpkin muffins, pumpkin cupcakes, pumpkin candles, pumpkin seeds, pumpkin coffee from Fresh Market, pumpkin creamer, pumpkin almost anything....but i HATE pumpkin pie. One word: TEXTURE.

2. free $150 OralB toothbrushes. I knew dental school was good for something! Last week, the oralB/Crest guy came to UofL and gave a "lunch and learn" for the students telling them how great this new toothbrush and Crest was. Then he gave each student one with multiple brushing heads- so i benefit too! Now, J and I fight over who gets to brush first! The toothbrush even has bluetooth technology to let you know if you are brushing too hard, when you should move to the next quadrant of your mouth, and a smiling face that let's you know if you've done a good job. It also has different modes to massage your gums, deep clean, be more sensitive, etc. It's amazing to say the least and now we both can't wait to brush our teeth. Also, they seem to feel much cleaner than when I brush with the regular brush--i guess that's the point?

3. sojourn. you might be thinking, what's that? Well, it's the church here that we are currently taking the membership class to join. We absolutely love it already and have been so blessed/challenged by the Biblical teaching. We also bought one of the cds they have produced and LOVE it. We are planning on buying another this week! I am going to also start working with the 4 and 5 year olds and J is planning on joining their medical team--in case anyone needs CPR or first aid during the service. Anyway, we love it there and feel very at home:)

4. JAMES- This should have been number 1, but I got on a role with the whole pumpkin thing! I cannot tell you what a great husband I have! He is so loving and attentive and more importantly loves the Lord first. I am so, so blessed!!

5. ChRiStMaS- I know it's a little early to think about this, but before you know it Thanksgiving will have come and gone and it will be right around the corner. I love everything about Christmas- the purpose, the celebration, the time with family, the weather, the great food and decorations, the feeling of happiness. Yes, Christmas is my favorite holiday and i am already anticipating it for this year:)

the last of J's birthday




These are a bit of the past...but here are a few more of J's birthday. I decorated the house so that when he got home he would be surprised...and I got him new Sperrys! He was thrilled :) I think the 22nd birthday was a success! BEST of all, we ate at SKYLINE chili (because I refuse to eat there at any other time) and he was a happy camper!

This table has been used by almost ALL of my family members in apartments or homes and it was eventually passed to me. So I decided to add my mark :) The lovely flowers were a surprise from my sweet husband! Love him!

HaPpY BiRtHdAy JaMeS!

Yay! Today is J's 22nd BiRtHdAy!!!

I have to admit that i probably get more excited about birthdays (even those that aren't mine) than him...BUT I think I am starting to rub off on him. This year, I wrapped his presents about 3 days early and set them on the buffet in the dining room. BIG MISTAKE! He couldn't wait to open them and somehow weaseled his way into opening one early! Sounds just like me! I have never seen him like this :) So here is a picture of his early gift- his EKU diploma, matted
and framed. He loved it and we are excited to hang it in our house. I guess when he finishes dental school you might some kind of duplicate of this picture?

Anyway, if you think of it, send a Happy Birthday his way today via comment, our facebook or whater! He is such a wonderful, loving husband and deserves an AWESOME day! I could not ask for better!

Today's festivities? J is off to school for the day, but I am going to go eat lunch with him. Tonight, what did he choose to eat?? SKYLINE chili (haha, probably because I will NEVER go there unless it is his birthday!) and ice cream. Then he has a few more things to open ;) I think it's going to be a GREAT day!

What is a workout room really for?

Can I tell you something HILARIOUS that I have been observing now for a few weeks??

Every night J and I have been driving to Cherokee Park to either walk or jog the scenic loop there. On the way back from the park, it is usually dark (or almost) and nearing 9 or 9:30pm. AND every night (so far) as we pass by the little office building for our apt. complex we notice the light in the work out room is on- not too weird I suppose if someone were working out in there. Inside are 2 treadmills, some other bike like thing, a bo-flex (i think?) and an old tv to watch while you sweat.

Instead of seeing someone using the equipment, EVERY night thus far we have seen people in there watching the tv!!! HILARIOUS?!?!?! It makes me laugh EVERY time we pass as we wait anxiously to see if someone will be diligently sitting in the child size chairs they have in there (for kids if you bring them when you work out) watching their favorite program? It's almost becoming a game.

So, whoever you are who is watching tv EVERY night in the workout room...please don't stop. You are bringing laughter to our lives just a little bit with each program you just can't miss!

In other news, TOMORROW is J's 22nd BIRTHDAY!!!!!! Hopefully I will get a few minutes to blog something special for him :)

What would you do for a Klondike Bar?

The other day at the grocery, I had a weak moment...and I bought Klondike bars. You might be thinking that's not too bad and if I had stopped at one week, you would be right. BUT now both J and I have become addicted to Klondikes :) I almost can't wait to finish dinner just so I can eat one. This got me to thinking...what would YOU do for a klondike bar?
